- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 cup ricotta cheese
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

- In another bowl, beat butter and sugar until fluffy. Add egg, ricotta, lemon juice, and zest.
- Gradually mix in dry ingredients until just combined.
- Drop dough by tablespoons onto baking sheets, spacing 2 inches apart.
- Bake for 12-15 minutes until edges are golden. Let cool on wire racks.
