Ingredients

  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Add garlic, cumin, and paprika. Cook for 1 minute.
  4. Stir in lentils, vegetable broth, and diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Season with salt and pepper.
  7. Serve hot.
