A hearty dish featuring boiled potatoes, corn, and sausage in a rich butter and onion sauce.

Ingredients

  • 2 lbs small potatoes
  • 4 ears of corn, cut into halves
  • 1 lb smoked sausage, sliced
  • 1 cup unsalted butter
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning
  • Salt and pepper to taste
  • Water for boiling

Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Add potatoes and cook until tender, about 15 minutes.
  3. Add corn and sausage to the pot, and cook for an additional 5 minutes.
  4. In a separate pan, melt butter over medium heat.
  5. Add onion and garlic to the melted butter, sauté until soft.
  6. Stir in Old Bay seasoning, salt, and pepper.
  7. Drain the potatoes, corn, and sausage, then return to the pot.
  8. Pour the butter and onion mixture over the boiled ingredients and toss to combine.
  9. Serve hot.
