  • 2 live lobsters (about 1.5 lbs each)
  • 4 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated Gruyère cheese
  • 1 tbsp chopped parsley
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the lobsters for 8 minutes, then cool and remove the meat.
  2. Melt butter in a pan, add flour, and cook for 1 minute.
  3. Gradually whisk in milk and cream until smooth.
  4. Stir in mustard, Parmesan, Gruyère, parsley, lemon juice, salt, and pepper.
  5. Fold in lobster meat and spoon into lobster shells.
  6. Broil for 3-5 minutes until golden and bubbly.
