Ingredients

  • 2 live lobsters (1.5 lbs each)
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated Gruyère cheese
  • 1 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil lobsters for 8 minutes, then cool and remove meat from shells. Chop meat into bite-sized pieces.
  3. Melt butter in a pan and sauté onions until soft.
  4. Add white wine and reduce by half.
  5. Stir in heavy cream and Dijon mustard, simmer until thickened.
  6. Mix in lobster meat and season with salt and pepper.
  7. Fill lobster shells or ramekins with the mixture.
  8. Sprinkle with Parmesan and Gruyère cheese.
  9. Broil for 3-5 minutes until cheese is golden and bubbly.
  10. Garnish with parsley and serve hot.
