A delicious low-carb version of classic beef stroganoff, perfect for a hearty meal without the carbs.

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add beef slices and cook until browned. Remove and set aside.
  3. In the same skillet, sauté onion and garlic until softened.
  4. Add mushrooms and cook until tender.
  5. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir well.
  6. Return beef to the skillet and simmer for 5 minutes.
  7. Reduce heat and stir in sour cream. Cook until heated through.
  8. Season with salt and pepper. Garnish with fresh parsley before serving.
