Ingredients

  • 2 large eggs
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup cooked ground turkey or chicken
  • 1/4 cup shredded cheese
  • 1/2 avocado, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Hot sauce (optional)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced bell peppers and onions. Sauté for 2-3 minutes.
  3. Add ground turkey or chicken. Cook until heated through.
  4. Push the mixture to one side of the pan. Crack eggs into the other side and scramble.
  5. Combine everything in the pan. Season with salt and pepper.
  6. Transfer to a bowl. Top with shredded cheese, avocado slices, and hot sauce if desired.
