Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese
  • 1/2 cup enchilada sauce
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1 tsp taco seasoning

Instructions

  1. Preheat oven to 375°F.
  2. Mix chicken, onions, bell peppers, and taco seasoning in a bowl.
  3. Spread half the enchilada sauce in a baking dish.
  4. Layer chicken mixture over sauce.
  5. Top with remaining sauce and cheese.
  6. Bake for 20 minutes or until cheese melts.

Notes

  • Use rotisserie chicken for quicker prep.
  • Add jalapeños for extra spice.
