A simple low-carb breakfast option with spinach and cheddar baked into fluffy egg bites.

Ingredients

  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped fresh spinach
  • 1/4 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a muffin tin or use silicone liners.
  3. Whisk eggs, cream, salt, and pepper in a bowl.
  4. Stir in spinach and cheddar cheese.
  5. Pour mixture into muffin cups, filling 3/4 full.
  6. Bake for 20-25 minutes until set.
  7. Let cool slightly before removing from the tin.
