  • 4 medium zucchinis
  • 1 lb ground turkey
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the insides.
  3. In a skillet, cook ground turkey, onion, and garlic until browned.
  4. Add diced tomatoes, seasoning, salt, and pepper to the skillet.
  5. Mix well and cook for another 5 minutes.
  6. Spoon the mixture into the zucchini halves.
  7. Top with shredded cheese.
  8. Place on a baking sheet and bake for 25-30 minutes.
  9. Remove from oven and let cool slightly before serving.
