A simple, low-fat chicken casserole that’s easy to prepare and packed with flavor.

Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup low-fat chicken broth
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 cup chopped onions
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 cup low-fat cream of mushroom soup
  • 1 cup whole wheat pasta, uncooked

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix chicken, broth, carrots, celery, onions, garlic powder, thyme, and black pepper.
  3. Stir in cream of mushroom soup and uncooked pasta.
  4. Transfer the mixture to a casserole dish.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 15 minutes.
  7. Serve hot.

Notes

  • You can substitute chicken broth with vegetable broth.
  • Add more vegetables if desired.
  • Store leftovers in an airtight container for up to 3 days.
