A hearty low fat ham and bean soup packed with flavor.

Ingredients

  • 1 cup diced ham
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups low sodium chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for 1 minute.
  3. Add ham, beans, broth, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Remove bay leaf before serving.

Notes

  • Can substitute turkey ham for lower fat.
  • Add more vegetables for extra nutrition.
