A hearty and comforting lasagna soup that’s easy to prepare ahead of time.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh basil

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Simmer for 15 minutes or until noodles are tender.
  6. Serve topped with ricotta, mozzarella, and fresh basil.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze without cheese toppings for best results.
  • Add more broth if soup thickens too much upon reheating.
