- 1 lb boneless, skinless chicken breast, cubed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced red onion
- 1/4 cup chopped parsley
- 1/4 cup kalamata olives
- 2 tbsp lemon juice
- Heat olive oil in a pan over medium-high heat.
- Add chicken cubes and season with garlic powder, paprika, cumin, salt, and black pepper.
- Cook chicken for 6-8 minutes until fully cooked. Remove from heat.
- Divide cooked quinoa among serving bowls.
- Top quinoa with cooked chicken, cucumber, cherry tomatoes, feta cheese, red onion, parsley, and olives.
- Drizzle lemon juice over each bowl.
- Serve immediately.
