A delicious and healthy Mediterranean-inspired chicken bowl packed with fresh ingredients and bold flavors.

Ingredients

  • 1 lb boneless, skinless chicken breast, cubed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onion
  • 1/4 cup chopped parsley
  • 1/4 cup kalamata olives
  • 2 tbsp lemon juice

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Add chicken cubes and season with garlic powder, paprika, cumin, salt, and black pepper.
  3. Cook chicken for 6-8 minutes until fully cooked. Remove from heat.
  4. Divide cooked quinoa among serving bowls.
  5. Top quinoa with cooked chicken, cucumber, cherry tomatoes, feta cheese, red onion, parsley, and olives.
  6. Drizzle lemon juice over each bowl.
  7. Serve immediately.

Notes

  • Use leftover grilled chicken for a quicker meal.
  • Swap quinoa for brown rice or couscous if preferred.
  • Add a dollop of hummus or tzatziki for extra flavor.
