A hearty and nutritious lentil soup with Mediterranean flavors.

Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion, carrots, and celery. Cook for 5 minutes.
  4. Add garlic, cumin, and paprika. Stir for 1 minute.
  5. Pour in vegetable broth and diced tomatoes.
  6. Add lentils and bring to a boil.
  7. Reduce heat and simmer for 25 minutes.
  8. Season with salt and pepper.
  9. Serve hot.
