A hearty and flavorful Mediterranean lentil soup packed with vegetables and spices.

Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse lentils and set aside.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  5. Add lentils, broth, and diced tomatoes. Bring to a boil.
  6. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.

  • Soak lentils for faster cooking.
