  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sliced olives
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Whisk the eggs in a bowl.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add tomatoes and spinach, sauté for 2 minutes.
  4. Pour the eggs into the skillet.
  5. Sprinkle feta cheese and olives on top.
