A fresh and flavorful Mediterranean orzo salad packed with vibrant vegetables, herbs, and a zesty dressing.

Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook orzo in boiling water according to package instructions. Drain and let cool.
  2. In a large bowl, combine cucumber, tomatoes, red onion, olives, parsley, and mint.
  3. Add cooled orzo to the bowl and mix well.
  4. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Sprinkle feta cheese on top before serving.

Notes

  • Chill for 30 minutes before serving for best flavor.
  • Add grilled chicken or shrimp for extra protein.
