- 2 cups chopped bell peppers (red, yellow, green)
- 2 cups chopped zucchini
- 1 cup cherry tomatoes
- 1 red onion, sliced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup crumbled feta cheese (optional)
- 2 tbsp chopped fresh parsley
- Preheat oven to 400°F (200°C).
- In a large bowl, toss bell peppers, zucchini, cherry tomatoes, and red onion with olive oil.
- Add oregano, garlic powder, salt, and black pepper. Mix well.
- Spread vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and slightly browned.
- Remove from oven and sprinkle with feta cheese and parsley if desired.
- Serve warm.
