  • 2 Meyer lemons, juiced and zested
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, and thyme.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear chicken for 3-4 minutes per side until golden brown.
  5. Add garlic, lemon juice, zest, and chicken broth to the skillet.
  6. Transfer skillet to the oven and bake for 15-20 minutes until chicken reaches 165°F.
