Meyer lemon muffins are light, fluffy, and bursting with citrus flavor. They make a perfect breakfast or snack.

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon Meyer lemon zest
  • 1/4 cup Meyer lemon juice
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, cream together the butter and sugar.
  3. Add the eggs, milk, lemon zest, and lemon juice. Mix well.
  4. In another bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  6. Fill muffin cups 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
