A moist and flavorful quick bread made with grated zucchini. Perfect for breakfast or a snack.

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk oil, sugar, eggs, and vanilla.
  4. Stir the dry ingredients into the wet mixture until just combined.
  5. Fold in grated zucchini.
  6. Pour batter into the prepared pan.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Cool before slicing.

Notes

  • Squeeze excess moisture from zucchini for better texture.
