A rich and aromatic Moroccan tagine featuring black truffles for a luxurious twist.

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 lb lamb or beef, cubed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 cup diced tomatoes
  • 2 cups vegetable or beef broth
  • 1/2 cup dried apricots, chopped
  • 1/4 cup black truffle, thinly sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a tagine or heavy pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add meat and brown on all sides.
  4. Stir in cumin, coriander, paprika, turmeric, and cinnamon.
  5. Add tomatoes and broth, bring to a simmer.
  6. Cover and cook on low heat for 1.5 hours.
  7. Add apricots and black truffle, cook for another 30 minutes.
  8. Season with salt and pepper.
  9. Garnish with fresh cilantro before serving.
