- 1 large onion, diced
- 3 garlic cloves, minced
- 1 lb lamb or beef, cubed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1 cup diced tomatoes
- 2 cups vegetable or beef broth
- 1/2 cup dried apricots, chopped
- 1/4 cup black truffle, thinly sliced
- Salt and pepper to taste
- Fresh cilantro for garnish
- Heat olive oil in a tagine or heavy pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add meat and brown on all sides.
- Stir in cumin, coriander, paprika, turmeric, and cinnamon.
- Add tomatoes and broth, bring to a simmer.
- Cover and cook on low heat for 1.5 hours.
- Add apricots and black truffle, cook for another 30 minutes.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
