- 1 pound dried navy beans
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 ham hock
- 6 cups chicken broth
- 1 bay leaf
- Salt and pepper to taste
- Soak the dried beans overnight in water.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Add soaked beans, ham hock, chicken broth, and bay leaf.
