  • 1 tbsp unsalted butter
  • 1 tbsp fresh chives, finely chopped
  • 20g caviar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Crack the eggs into a bowl and whisk until well combined.
  2. Heat a non-stick pan over medium heat and melt the butter.
  3. Pour the whisked eggs into the pan and let them cook undisturbed for 1 minute.
  4. Gently stir the eggs with a spatula, allowing the uncooked parts to flow to the edges.
  5. When the eggs are mostly set but still slightly runny, sprinkle chives evenly over the top.
  6. Fold the omelette in half and slide it onto a plate.
  7. Top with caviar and serve immediately.

Notes

  • Use high-quality caviar for the best flavor.
  • Do not overcook the eggs to keep the omelette soft.
  • Serve with toasted bread if desired.
