Ingredients

  • 4 chicken breasts
  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 1 cup cherry tomatoes
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix lemon juice, garlic, olive oil, salt, pepper, and oregano.
  3. Add chicken breasts to the bowl and coat them in the marinade.
  4. In a large oven-safe skillet, heat remaining olive oil over medium heat.
  5. Sear chicken breasts for 5 minutes on each side until browned.
  6. Add chicken broth and cherry tomatoes to the skillet.
  7. Bake in the oven for 25-30 minutes until chicken is cooked through.
  8. Garnish with fresh parsley before serving.
