A rich and creamy lasagna soup made in one pot for easy preparation and cleanup.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 8 oz lasagna noodles, broken into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add diced onion and minced garlic. Cook until softened.
  3. Pour in crushed tomatoes and chicken broth. Stir well.
  4. Add broken lasagna noodles, basil, oregano, salt, and pepper. Simmer for 15 minutes.
  5. Stir in heavy cream and simmer for another 5 minutes.
  6. Top with mozzarella and Parmesan cheese. Cover until cheese melts.
  7. Garnish with fresh basil before serving.

Notes

  • Use ground turkey for a lighter version.
  • Add spinach or mushrooms for extra vegetables.
  • Store leftovers in an airtight container for up to 3 days.
