- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 pound cooked ham, diced
- 1 can (15 oz) white beans, drained and rinsed
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until vegetables soften.
- Add diced ham and cook for a few minutes.
- Stir in white beans, chicken broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for 30 minutes.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
