A hearty and comforting one pot ham and bean soup.

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 pound cooked ham, diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until vegetables soften.
  3. Add diced ham and cook for a few minutes.
  4. Stir in white beans, chicken broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  6. Season with salt and pepper to taste.
  7. Remove bay leaf before serving.
