- 200ml coconut milk
- 50g sugar
- 1 tbsp agar-agar powder
- 100ml water
- Cut the passionfruits in half and scoop out the pulp.
- Strain the pulp to collect the juice, discarding the seeds.
- In a saucepan, mix the passionfruit juice, sugar, agar-agar, and water. Bring to a boil.
- Simmer for 2 minutes, then pour into molds. Let it cool and set in the fridge.
- Blend the coconut milk until frothy to create coconut snow.
- Serve the passionfruit gel topped with coconut snow.
