A quick and flavorful stir fry with chicken, pineapple, and ginger.

Ingredients

  • 1 cup pineapple chunks
  • 1 tablespoon fresh ginger, minced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and ginger, sauté for 1 minute.
  3. Add chicken slices, cook until no longer pink.
  4. Add mixed vegetables and pineapple, stir well.
  5. Pour in the soy sauce, mix thoroughly.
  6. Cook for another 5 minutes until vegetables are tender.
