- 1 cup shelled pistachios
- 3 egg yolks
- 1/4 cup sugar
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1 tsp vanilla extract
- 1 cup strong brewed coffee, cooled
- 24 ladyfinger cookies
- 2 tbsp cocoa powder
- Blend pistachios into a fine powder and set aside.
- Whisk egg yolks and sugar until pale and thick.
- Fold in mascarpone cheese and vanilla extract.
- Whip heavy cream to stiff peaks and gently fold into the mascarpone mixture.
- Dip ladyfingers into coffee and layer in a dish.
- Spread half the pistachio cream over the ladyfingers.
- Repeat layers and dust with cocoa powder.
- Chill for at least 4 hours before serving.
