Ingredients

  • 1 cup dried porcini mushrooms
  • 2 cups heavy cream
  • 4 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 small shallot, minced

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Soak porcini mushrooms in warm water for 20 minutes, then drain and chop finely.
  3. Heat butter in a pan and sauté shallots until soft.
  4. Add chopped mushrooms and cook for 3 minutes.
  5. Whisk eggs, cream, salt, and pepper in a bowl.
  6. Stir in mushroom mixture.
  7. Pour into ramekins and bake for 30 minutes.
  8. Let cool slightly before serving.
