A delicious and easy-to-make pork fried rice with fresh vegetables.

Ingredients

  • 2 cups cooked rice
  • 1 cup diced pork
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • 1 egg, beaten
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add diced pork and cook until browned.
  3. Add mixed vegetables and cook for 3-4 minutes.
  4. Push the pork and vegetables to one side of the skillet.
  5. Pour beaten egg into the empty side and scramble until cooked.
  6. Add cooked rice and soy sauce. Stir to combine.
  7. Season with salt and pepper. Stir in green onions.
  8. Cook for an additional 2-3 minutes until heated through.

Notes

  • Use day-old rice for better texture.
  • Feel free to add more vegetables of your choice.
  • Adjust soy sauce to taste.
