  • 2 tbsp olive oil
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Pat the roast dry with paper towels.
  3. Rub olive oil all over the roast.
  4. Mix salt, pepper, garlic powder, thyme, and rosemary in a bowl.
  5. Coat the roast evenly with the seasoning mix.
  6. Place the roast on a rack in a roasting pan, fat side up.
  7. Roast for 15 minutes, then reduce heat to 325°F (165°C).
  8. Cook until internal temperature reaches 120°F (49°C) for rare or 130°F (54°C) for medium-rare.
