Ingredients

  • 2 large whole wheat tortillas
  • 1/2 cup shredded cheddar cheese
  • 2 large eggs, scrambled
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup cooked chicken breast, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté until soft.
  3. Add black beans and chicken, cook for 2 minutes.
  4. Pour in scrambled eggs, stir until fully cooked.
  5. Place one tortilla on a clean surface, spread the mixture evenly.
  6. Sprinkle cheese on top, cover with the second tortilla.
  7. Heat a pan over medium heat, cook the quesadilla for 2-3 minutes per side until golden and crispy.
  8. Cut into wedges and serve hot.
