A quick and easy blueberry cream cheese loaf perfect for breakfast or dessert.

  • 1/2 cup cream cheese, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries, fresh or frozen

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat cream cheese and butter until smooth.
  4. Add eggs and vanilla extract to the cream cheese mixture, and mix well.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the blueberries gently.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let it cool before slicing.
