  • 3 garlic cloves, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 pound ground beef
  • 1 cup red wine
  • 28 ounces canned crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • 1/2 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Sauté for 5 minutes until softened.
  3. Add ground beef and cook until browned, breaking it up with a spoon.
  4. Pour in red wine and simmer for 3 minutes to reduce slightly.
  5. Stir in crushed tomatoes, tomato paste, oregano, and basil.
  6. Season with salt and black pepper.
  7. Simmer on low heat for 45 minutes, stirring occasionally.
  8. Garnish with fresh parsley before serving over cooked pasta.
