- 4 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 2 tbsp butter
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 30g high-quality caviar
- Salt and pepper to taste
- Heat the broth in a saucepan and keep warm.
- In a separate pan, sauté onion in butter and olive oil until soft.
- Add the rice and stir to coat with the butter and oil.
- Pour in the white wine and stir until absorbed.
- Add broth one ladle at a time, stirring until absorbed.
- Continue until rice is creamy and al dente.
- Stir in Parmesan cheese and season with salt and pepper.
- Top with caviar before serving.
