Roasted eggplant is a flavorful dish made by cooking eggplant until tender and slightly caramelized.

Ingredients

  • 2 medium eggplants
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and scoop out some of the flesh.
  3. Brush the cut sides with olive oil and sprinkle with salt and pepper.
  4. Place the eggplants cut side down on a baking sheet.
  5. Bake for 25-30 minutes or until tender.
  6. In a small bowl, mix garlic and balsamic vinegar.
  7. Remove eggplants from the oven and drizzle the garlic mixture on top.
  8. Return to the oven for an additional 5 minutes.
  9. Garnish with fresh basil before serving.
