  • 1 cup roasted red peppers, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package instructions.
  2. In a pan, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add roasted red peppers and cook for 2-3 minutes.
  5. Stir in ricotta and Parmesan cheese until well combined.
  6. Season with salt and pepper.
