Ingredients

  • 2 cups cooked ham, diced
  • 1 cup dried navy beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for 1 minute.
  3. Stir in the ham and cook for 3 minutes.
  4. Add soaked beans, broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. Season with salt and pepper.
  7. Remove bay leaf before serving.
