A light and airy dessert featuring saffron-infused meringue topped with crushed pistachios.

Ingredients

  • 4 egg whites
  • 1 cup granulated sugar
  • 1/2 tsp saffron threads, soaked in 1 tbsp warm water
  • 1/4 cup crushed pistachios
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 225°F (110°C). Line a baking sheet with parchment paper.
  2. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  3. Gradually add sugar, beating until stiff peaks form.
  4. Fold in saffron water and vanilla extract.
  5. Pipe or spoon meringue onto the baking sheet.
  6. Bake for 1.5 hours, then turn off the oven and let cool inside for another hour.
  7. Sprinkle crushed pistachios on top before serving.
