Shakshuka is a dish of poached eggs in a spicy tomato sauce.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • 4 large eggs
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper. Cook until soft.
  3. Add garlic, cumin, and paprika. Stir for 1 minute.
  4. Add crushed tomatoes. Simmer for 10 minutes.
  5. Make wells in the sauce and crack eggs into each well.
  6. Cover and cook until eggs are set.
  7. Season with salt and pepper.
  8. Garnish with parsley before serving.

Notes

  • Serve with crusty bread.
  • Adjust spices to taste.
  • Can add feta cheese for extra flavor.
