  • 1 cup buckwheat flour
  • 1/2 cup all-purpose flour
  • 1 tsp active dry yeast
  • 1/2 tsp salt
  • 3/4 cup warm milk
  • 1 egg
  • 2 tbsp melted butter
  • 100g Siberian sturgeon, thinly sliced
  • 1/2 cup crème fraîche
  • 1 tbsp yuzu juice
  • 1 tsp lemon zest
  • Fresh dill for garnish

Instructions

  1. Combine flours, yeast, and salt in a bowl.
  2. Whisk in warm milk, egg, and melted butter. Let the batter rest for 1 hour.
  3. Heat a non-stick pan over medium heat. Spoon small amounts of batter to form blinis. Cook until bubbles form, then flip.
  4. Mix crème fraîche, yuzu juice, and lemon zest in a bowl.
  5. Top each blini with a slice of sturgeon and a dollop of yuzu cream.
  6. Garnish with fresh dill and serve immediately.
