- 2 lbs beef chuck, cut into chunks
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Heat a skillet over medium heat and brown the beef chunks.
- Transfer the beef to the slow cooker.
- Add carrots, potatoes, onion, garlic, and spices.
- Pour in the beef broth and add tomato paste.
- Stir to combine all ingredients.
