A hearty slow cooker beef stew filled with tender beef and vegetables.

Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and brown the beef chunks.
  2. Transfer the beef to the slow cooker.
  3. Add carrots, potatoes, onion, garlic, and spices.
  4. Pour in the beef broth and add tomato paste.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Adjust seasoning before serving.

Notes

  • For thicker stew, mix 2 tbsp cornstarch with cold water and stir in during the last 30 minutes.
  • You can add peas for extra color and flavor.
  • Store leftovers in the fridge for up to 3 days.
