A creamy and flavorful butter chicken made in a slow cooker, perfect for low carb diets.

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 cup coconut milk
  • 1/2 cup butter
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add chopped onion, garlic, and ginger.
  3. Pour in coconut milk and add butter.
  4. Sprinkle garam masala, turmeric, cumin, paprika, and salt over the top.
  5. Stir to combine.
  6. Cover and cook on low for 6-8 hours or high for 4 hours.
  7. Shred the chicken with two forks and mix well.
  8. Garnish with fresh cilantro before serving.
