Ingredients

  • 1 pound dried navy beans
  • 1 pound cooked ham, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse and sort the beans.
  2. Place beans, ham, onion, carrots, celery, and garlic in the slow cooker.
  3. Add chicken broth, thyme, bay leaf, salt, and pepper.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove bay leaf before serving.
  7. Adjust seasoning as needed.

  • Soaking the beans overnight can reduce cooking time.
  • Use leftover ham for extra flavor.
