A hearty and flavorful soup combining the classic taste of lasagna with Italian sausage, cooked conveniently in a slow cooker.

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 (6 oz) can tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Brown the Italian sausage in a skillet over medium heat. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet, sauté for 2-3 minutes.
  3. Transfer the sausage mixture to the slow cooker.
  4. Add crushed tomatoes, chicken broth, tomato paste, basil, oregano, salt, and pepper. Stir well.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Add broken lasagna noodles, stir, and cook for an additional 30 minutes or until noodles are tender.
  7. Serve with dollops of ricotta, Parmesan, and shredded mozzarella on top.

Notes

  • Use spicy Italian sausage for extra heat.
  • Substitute ground beef for sausage if preferred.
  • Store leftovers in the fridge for up to 3 days.
