Ingredients

  • 3 lbs pork shoulder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup orange juice
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Brown the pork shoulder on all sides.
  3. Transfer pork to the slow cooker.
  4. Add onion, garlic, cumin, oregano, paprika, salt, and pepper.
  5. Pour orange juice and lime juice over the pork.
  6. Cover and cook on low for 8 hours.
  7. Shred the pork with two forks.
  8. Serve with your choice of low-carb tortillas or lettuce wraps.
