Smoked oysters with lemon gelée is a light and refreshing appetizer. The smoky flavor of the oysters pairs perfectly with the tangy lemon gelée.

Ingredients

  • 12 smoked oysters
  • 1 cup fresh lemon juice
  • 1 packet gelatin (about 2 1/2 tsp)
  • 1/4 cup cold water
  • 1 tbsp sugar
  • 1 tsp lemon zest
  • Fresh dill for garnish

Instructions

  1. Bloom gelatin in cold water for 5 minutes.
  2. Heat lemon juice and sugar in a small saucepan until sugar dissolves.
  3. Add bloomed gelatin to the warm lemon juice, stir until fully dissolved.
  4. Stir in lemon zest and let the mixture cool slightly.
  5. Pour a thin layer of lemon gelée into serving glasses and refrigerate until set (about 30 minutes).
  6. Place smoked oysters on top of the set gelée.
  7. Pour remaining gelée over the oysters and chill until fully set (about 2 hours).
  8. Garnish with fresh dill before serving.

  • Use freshly squeezed lemon juice for best flavor.
  • Adjust sugar based on your preferred tartness level.
  • Chill serving glasses beforehand for faster setting.
