- 12 smoked oysters
- 1 cup fresh lemon juice
- 1 packet gelatin (about 2 1/2 tsp)
- 1/4 cup cold water
- 1 tbsp sugar
- 1 tsp lemon zest
- Fresh dill for garnish
- Bloom gelatin in cold water for 5 minutes.
- Heat lemon juice and sugar in a small saucepan until sugar dissolves.
- Add bloomed gelatin to the warm lemon juice, stir until fully dissolved.
- Stir in lemon zest and let the mixture cool slightly.
- Pour a thin layer of lemon gelée into serving glasses and refrigerate until set (about 30 minutes).
- Place smoked oysters on top of the set gelée.
- Pour remaining gelée over the oysters and chill until fully set (about 2 hours).
